How to cook classic dumpling soup

Carrot – 1 pc.
Onion – 0.5 pcs.

Wheat flour – 80 g
Salt – 1 tbsp. l
. Dill – 10 g
Water – 2 liters
Preparation: Step 1
Before you start cooking the classic soup with dumplings, prepare all the products. You can take any meat — from the thigh to the wings, but the chicken broth from the soup set will be especially fragrant. Peel the vegetables, wash the eggs, and measure out the flour. If you want to save time, use pre—cooked broth.

Rinse the chicken and cover with cold water. Put the pan on the fire, bring to a boil, remove the foam. Add salt — about 1 tbsp. l. without a slide. Simmer for 25-30 minutes, until the meat is tender.

Tip: To make the broth especially rich, you can add the whole onion and carrot, and then remove them.

At this time, prepare the vegetables. Grate carrots on a coarse grater or cut into strips. Potatoes are cut into cubes or thin strips.

Tip: It is better to put potatoes in water after slicing, so they will not darken and give off excess starch, so that the broth remains transparent.

Remove the meat from the slightly cooled broth, and carefully strain the broth into another saucepan. The sediment, which often remains at the bottom of the pan, does not need to be filtered. Then the broth will be clean and transparent.

Add potatoes, carrots, onions and bay leaf to the boiling chicken broth. Simmer for 15 minutes until the potatoes are soft.

Tip: If you want a richer flavor, saute onions and carrots in butter or vegetable oil until soft, then add to the soup.

To save time, you can pre-cook and freeze fried onions and carrots. It is very convenient if you cook soups often.

While the vegetables are cooking, cook the dumplings. In a bowl, sift the flour, add salt (0.3 tsp.) and break the eggs.

Mix all the ingredients with a fork until smooth. You should get a viscous, stringy dough.

Form the dumplings. This can be done with two teaspoons soaked in water. Scoop out a little dough with one spoon, and remove the other and dip it into the boiling soup.

You can use another technique. Put the dough in a pastry bag or a thick bag and, while squeezing out, cut off small pieces with scissors soaked in water. The dumplings will turn out more even, and the process itself will take less time. If the hole in the bag is made small, the dumplings will be smaller and neater. It’s worth experimenting to find your best option.

When the soup boils again, the dumplings will float to the surface. This means that they are ready. Add chopped herbs, if desired, and boiled chicken meat, separated from the bones. Or add them to each serving separately. Cook the classic soup with dumplings for another 2-3 minutes.
