
Soft and Fluffy Kefir Crepes

This is one of my favorite crepe recipes. It’s my mom’s recipe and everyone who tried these kefir crepes (blini) instantly declare they are the best they’ve ever had. They come out so soft and fluffy. I usually can’t get enough of these and always customize them with different flavors.
Ingredients
- 2 1/2 cups all-purpose flour
- 2 eggs
- 1 us liquid quart kefir (low fat or non-fat, I used 1 bottle plain kefir, can be replaced by buttermilk)
- 1 teaspoon baking soda
- 2 tablespoons sugar
- 3 tablespoons oil (I used sunflower oil)
- 1 pinch salt
- oil (for greasing)
