
Polosochka is a delicate tea-time treat. It’s one if my favorite!
Try it out and I’m sure you’ll love it!
Ingredients:
For the dough: butter – 190 g
egg – 1 pc.
sugar – 130 g
flour – 350 g
baking powder – 1 tsp.
salt – 1 pinch
apricot jam – 170 g
For decoration: sugar fudge – 3 tbsp. (or frosting)
water – 1-2 tsp.
lemon juice – 1 tsp.
black chocolate – 4 cubes
Method:
Prepare the dough: in a deep bowl, mix the egg, sugar, salt and soft butter, beat until smooth. Gradually add flour and baking powder, knead the dough until crumbly. Gather it into a lump, wrap in plastic and put in the refrigerator for 30 minutes. Roll out the dough: divide the dough in half and roll out each part into a rectangle of approximately 20×25 cm. Return to the refrigerator for half an hour.
Bake the cakes:
Preheat the oven to 200°C and bake the cakes for 12-13 minutes until lightly browned. It is important not to overcook them.
Assemble the cakes: While the cakes are still warm, spread one of them with apricot jam and cover with the other cake. Allow to cool. Prepare the glaze.
